To make the Pepper Sauce

1. Add the sugar, soy sauce, oyster sauce, pepper and water into a small bowl and mix to combine. Set aside.

2. Heat oil on medium heat in a small-medium sized fry pan. Add garlic and ginger and fry until fragrant.

3. Add in pepper mix. Turn heat up to high and let it bubble and reduce to thicken slightly. This will take less than a minute.

4. Add in butter and stir through. Turn off the heat when the butter has melted and is incorporated in the sauce. Serve immediately.

To make the Sweet Potato Mash

1. Peel the sweet potato and cut into 3mm slices. Add into a medium sized pot.

2. Add milk into the pot (enough to cover the potatoes).

3. Heat mix on high. When the milk reaches boiling point, reduce the heat to medium-low so that the potatoes simmer gently in the milk to cook (this takes about 25mins from a cold start).

4. When the potatoes are fully cooked through, drain the milk, leaving some behind in the pot. Add butter and mash. Season with salt to taste.

To make the Steak

1. Choose your favourite cut and cook it to your liking. (We prefer ours seasoned with salt and cooked medium rare) 

To make the Prawns 

1. Into a medium sized bowl, add prawns, salt & olive. Mix well until combined

2. Heat skillet and add in prawns (do not overcrowd)

3. Once the prawns start to colour, flip over to colour the other side). Set aside. 

Spiced Pork Noodle Soup

Spiced Pork Noodle Soup

Prepare the Pork

  1. Place the pork bones and pork neck in a large pot. Fill it with water to cover all the meat and bones.
  2. Bring the pot to the boil and boil for 5 mins.
  3. Remove the bones and wash under tap water to remove all the scum and impurities.
  4. Discard the water in the pot and scrub the pot clean.

Make the Broth

  1. Return the cleaned pork bones and neck to the clean pot and fill with 10 cups of water.
  2. Place the dried shrimp, star anise, cinnamon, cloves, cardamom and bay leaves in a stock sock/bag. Add this stock bag into the pot.
  3. Add rock sugar.
  4. Bring the pot to the boil then reduce the heat to a simmer.
  5. Cover and let the stock simmer gently for 1 1/2 hours. Check occasionally and skim any scum build up in the stock and discard.
  6. After this time, remove the piece of pork neck and chill in the fridge to firm up overnight.
  7. Remove the pork bones and discard.
  8. Add tinned condensed tomato soup and fish sauce. Bring the stock to a boil and then reduce the heat to a simmer.
  9. Simmer for 30mins - 1 hour.
  10. Taste the broth and season.
  11. Leave it to cool to room temperature, then cover and refrigerate overnight.
  12. About 45 minutes before serving, take out your prepared broth from the fridge. Remove any excess fat which collected on the surface. Bring the pot to the boil and have it lightly simmering ready for plating.

Assembling

  1. Place one piece of lettuce (roughly torn) at the bottom of each noodle soup bowl.
  2. Prepare noodles per packet instructions then divide evenly among the 4 noodle soup bowls.
  3. Take out your piece of pork neck from the fridge and cut into thin slices. Place 5 or so slices on top of the noodles in each bowl.
  4. Bring a medium pot of water to the boil. Place fish balls and fish cakes in the water and remove when they have warmed through.
  5. Distribute the fish balls and fish cakes evenly amongst the 4 bowls.
  6. Place the garlic granules and oil in a heatproof bowl. Microwave for 30secs on 1000W. The garlic should be golden and the oil sizzling. If necessary, zap in 10 sec increments until your garlic develops a golden colour and the oil is sizzling. Set aside.
  7. Ladle in the hot broth into each bowl.

Garnish each bowl with:

  • A spoonful of crispy garlic oil.
  • A handful of chives.
  • Chopped coriander.
  • Sliced Spring onion.
  • Chilli to taste.

 

Crispy Prawn Balls

Crispy Prawn Balls

Makes approx 22 balls

1. Thaw out your spring roll wrappers and carefully separate into individual sheets. Using scissors, cut strips out of the sheets and separate into loose strips.

2. Blitz all the filling ingredients in a powerful food processor. You can have your balls chunky or blitz the mix longer for a sticky paste to get smooth and bouncy balls. Chill this filling mix for 30mins.

3. Take out your chilled filling and form into balls. This mix will yield about 22 balls.

4. Roll each ball into the strips of spring roll pastry to completely wrap each ball in pastry. Gently press in the pastry so that it sticks to the balls and trim off any long strands with scissors.

5. Heat up your oil to 180C and deep fry until golden. Drain on kitchen paper then serve hot with sweet chilli dipping sauce and/or yuzu mayo.

Makes about 30 dumplings 

Make the filling

1. Cut 1/3 of the prawns into 1cm chunks. Roughly chop and mince the remaining prawns using a cleaver. Add all prawns into a medium sized bowl.

2. Add the remaining ingredients into the bowl and mix until well combined.

3. Chill until needed.

Make the wrappers

1. Add all dry ingredients into a medium sized bowl. Add the boiling water (less 1T) and mix with a spatula to combine. If the dough is too dry, add in just enough water to form your dough. Place dough onto your bench top then knead until smooth.

2. Divide the dough into 14g balls.

3. Use a rolling pin to roll out each ball into round disc.

Make the dumplings

1. Add a small amount of filling into the centre of the wrapper. Squeeze to enclose the dumpling and pleat. Repeat for the remaining wrappers and filling.

2. Sit dumplings on perforated baking paper placed flat in your steamer basket. Steam for 6 minutes. Allow dumplings to cool slightly before removing from the steamer to avoid tearing the skin.

 

Enjoy with your choice of dipping sauce.

 

p.s. Keep in mind that the wrapper can be a bit tricky to handle if it’s too wet, so you may not need to entire cup of boiling water.

p.p.s If putting pleats in your dumpling is too much of a task, you can simply seal each dumpling off and shape them as half moons.

 

Crab Sushi Tray

Crab Sushi Tray

Serves: 2-4

Prepare your Rice

1. Wash and rinse your rice in tap water.

2. Cook the rice in a rice cooker. (1 Cup of fresh water is a guide for this amount of rice)

3. Transfer your cooked rice to a medium sized bowl and add sushi seasoning. Mix until combinied well. 

4. Spread the rice into the bottom of a baking tray to make one even flat layer.

I used a 20cm x 27cm tray.

Prepare your Crab Mix

1. In a medium sized bow, make the dressing by adding Kewpie mayo, sour cream and yuzu dressing. Mix together until well combined.

2. Separate the imitation crab sticks into strands.

3. Give the crab a rough chop then place into the bowl with the dressing. Mix together until well combined.

Assemble your Tray

1. Layer sliced avocado over the rice.

2. Sprinkle furikake on top of the avocado.

3. Spread the crab mix evenly on top.

4. Sprinkle on furikake

5. Scatter tobiko on top

6. Sprnkle on furikake to garnish.

Stir Fried Squid With Vegetables

Stir Fried Squid With Vegetables

Prep time: 20 minutes

Cook Time: 15 minutes

Total Time: 35 minutes

Serves: 4

1. Prepare the squid: Remove the head to detach from the body, pull out the quill and remove the outer skin. Be careful not to break the ink pocket and the eyes.  Clean the squid by placing them in a medium size bowl and massaging salt on them throughly. Rinse and drain. This will get rid of any fishy smells. Cut the squid into rings.

2. Cut pineapple, tomato, brown onion, cucumber into bite-size pieces and chinese celery into 4cm long pieces. Finely chop garlic.

3. In a small pot, add some water in and bring to a boil. Add the squid and pinch of salt, cook for 2 minutes. Rinse the squid under cold water and then drain it.                  

4. In large wok over medium high heat, add oil. Once oil is hot, add garlic and fry until fragrant. Add tomato and cucumber and stir well for 1-2 minutes until they are cooked but still crunchy. Then add squid and pineapple, chinese celery and brown onion. Season with fish sauce, salt and chicken powder.

5. Tranfer to a serving plate and sprinkle the top with some pepper. Serve with rice.                     

Vietnamese Sweet and Sour Soup

Vietnamese Sweet and Sour Soup

Prep time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Serves: 4

1. Finely chop garlic and shallots. Peel taro stem. Cut pineapple, okra, taro stem in diagonally intosimilar sized batons. Slice tomato into quartered pieces. Roughly cut herbs for garnish.

2. In a medium pan, add 2 tbsp oil, bring to heat, add 1 tsp of garlic, eschalot until fragrant. Add the fish and cook each side for 2 minutes. Then leave aside.

3. In a medium pot, add 2 tbsp oil. Once hot, add garlic and stir fry in a pot until it turns golden brown. Scoop out the garlic and set aside in a small bowl for garnish. Add 1/2 the amount of tomato in the pot, and stir fry until very tender. Slowly add in chicken stock or water and bring it to a boil.

4. Reduce heat to medium. Add in the remaining 1/2 of tomatoes, pineapple, okra, and cook for 3 minutes until almost soft.

5. Add in basa fillets. Season to taste with tamarind, sugar, fish sauce. Simmer until Basa is cooked through for 3 minutes. 

6. Add in bean sprout, taro stem and cook for another minute then remove from heat. 

7. Serving method: Put veggies first and then place the fish, herb, chilli and fried garlic.

8. Serve with steamed rice.
