1. Add garlic, coriander and sugar into a mortar. Using a pestle, pound until the garlic and coriander are crushed.

2. Add in chilli and basil leaves and continue to pound until you reach your desired consistency.

3. Add in fish sauce and lime juice and mix through. Taste and adjust seasoning if necessary.

Vietnamese Dipping Sauce (Nuoc Cham)

1. In a bowl, whisk together water and sugar until sugar dissolves.

2. Add in lime juice, fish sauce, garlic, vinegar and chili (if using) and stir to combine.

3. Store in an airtight container in the refrigerator (will last for weeks) 

 

This recipe makes approx 1L. For less, split the recipe in half.
